A single keg siphoned from an oak barrel of a beer in its aging process...Temporarily named, “TapXv.1” is a mixed-culture farmhouse ale fermented and conditioned in stainless then aged in oak for five months (so far). Sitting at 6.2% ABV, it is bright and funky with a hint of tartness and notes of tropical fruit, hay and vanilla.
Keep an eye out in the coming months for more surprises / sneak peeks into our mixed-culture barrel aging process via our “TapXv._” series!
Crisp, Floral, Crushed Grain
7.4% ABV New England Double IPA
Sometimes the devil is in the details. In this case, three details: dry hop 1, dry hop 2 and dry hop 3.
This may seem excessive, but it shouldn’t, because it isn’t. By forgoing the conventional practice of loading a medley of hops all in at once and instead opting for the staggering of three carefully curated additions of singular strains of hops we are able to create a distinct layering of flavors.
Obedience to Ritual starts with a foundation of hearty English barley and builds up through rich creamy mango and dank papaya to finish with the more delicate top notes of bright tangerine zest and freshly cut strawberry. Sometimes the devil IS in the details.
Aerodome No. 5:

Crisp, refreshing, warming, and approachable. This 9.1% English-style Imperial Stout is fruit forward with hints of dried plum, vanilla, and toasted coconut. Infinite Highway starts with a rich and velvety texture and finishes clean with a touch of roasted sugar.
